    Red fruits tart

    Ingredients

    For 6 persons:

    50 cl. Fresh double cream
    700g. red fruits (Valais strawberries, Valais raspberries, blueberries...)
    2 tbsp Grand Marnier
    1 orange
    Puff pastry
    25 g. caster sugar
    2 tbsp icing sugar
    1 sachet of vanilla sugar

    Recipe

    Preheat the oven to 200°C (Mark 7).
    Butter a flan case.
    Wash and remove the orange zest

    Roll out the puff pastry and place in the flan case. Prick the base of the tart with a fork then fill with dried beans to ensure that the pastry doesn’t rise during cooking.
    Put the pastry case in the oven for 12-15 minutes.
    Remove from the oven, take out the dried beans and leave it to cool.

    Whip the fresh cream until it is firm, then incorporate the orange zest, the caster sugar, the vanilla sugar and the Grand Marnier whilst continuing to whisk.
    Spread the mixture on to the bottom of the puff pastry tart.

    Arrange the red fruits on the tart by cutting the strawberries in two or into quarters according to their size
    Sprinkle with icing sugar.
