La Grange & La Paix

Site: an old building from the 1700s, converted into a Valaisian carnotzet in the picturesque main street of Evolène. The building is attached to the restaurant La Paix. The head chef and owner is Henri Georges.

Valaisian cuisine: “casse-croûte” (snack) fondue served in a pot made out of bread. Potato gratin. « Mayen » macaroni. Shepherd’s dish. 6 sorts of polenta with Hérens beef or rabbit stew. Open hearth raclette with 3 sorts of cheese. Meats served on Evolène soapstone platters. Valaisian asparagus in spring. Game and brisolée royale (a dish of roast chestnuts, cold meats, cheese and fruit) in autumn. Vintage wines by the glass, in ounces or decilitres.
