Site: an old restaurant at the entrance to the village of Evolène, with Valaisian bar, dining room, two vaulted cellars and a partially covered terrace. Warm décor, combining wood with stone.

Valaisian cuisine: various dishes based on cheese from Les Haudères: 5 sorts of croûte, fondue, and 4 types of pizza. Valaisian platter. Local cochonaille(pork cold cuts). Subject to availability: game from the region, Hérens rib of beef or entrecôte steak. In season: asparagus from the Valais, brisolée (a dish of roast chestnuts, cold meats, cheese and fruit). Desserts: apple tart, Valaisian sorbets, strawberry coupes and strawberry gratin. A fine list of Valaisian wines, specialities of the month. Valaisian spirits.
